Wow it´s been quite a while since I posted a recipe here on the blog! Today I wanna share a super easy and tasty vegan recipe with you: Puff Pastry Rolls! Filled with a spicy tomato bread spread and some smoked tofu, these are the perfect appetiser before the main meal. They are also make a great lunch for work or school because they taste as good chilled as they do warm and are easy to pack.
For about 13 rolls you will need:
First preheat your oven to 200°C and line a baking tray with parchment paper. Take the puff pastry out of the fridge ( it has to chill outside the fridge for about 10 minutes before you can use it). Slice the smoked tofu into small cubes. Heat up some coconut oil in a pan and fry the tofu until it´s golden. Add in the garlic, salt and pepper and fry for another minute, then turn of the heat. Place the unpacked puff pastry on the baking tray and use a knife to spread the bread spread on top. Next sprinkle on the tofu cubes. Roll up the pastry from the small side. Take a knife to cut the long roll into 1cm thick slices and place them on the tray. Put them in the oven for about 25min and let them cool a bit afterwards. So good!
