Soon is Valentine´s Day and what is more suitable for this day than something pink and sweet? These scones are really easy to make, vegan and have some pink swirls. But the best thing about them is how they taste with the raspberry jam! Absolutely delicious! Share them with your loved ones with some tea…
For about 10 to 12 scones you will need:
For the jam you will need:
First make sure you put the frozen berries out of the freezer and defrost them in a little pan on low heat. Take a big bowl and add the milk and a few drops of food colouring. Stir until the milk has an evenly pink colour. Next add all the other ingredients for the scones and combine everything until you get a nice dough. Place it in the fridge for 10 minutes.
While the dough is chilling in the fridge, we are making the jam: Take your raspberries and put them in a blender, add in the agave nectar and vanilla sugar and blend until smooth. Put the mixture in a bowl and add the chia seeds. Make sure to stir them in well or there will be lumps! Set the jam aside.
Take the dough out of the fridge and roll it out on some flour until it is about two centimetres thick. Take a round glass and cut out the scones. Place them on a baking tray lined with parchment paper and let them sit for 10 min. Preheat the oven on 175°C. Take some extra milk and brush it on the scones using a baking brush. Put them in the oven for about 10 minutes.
Serve the scones with jam and some ( vegan ) cream or butter, so so good!
