Food: Vegan Banana Bread


I am actually not a big fan of bananas on their own, but muffins or cake or anything baked with banana in it, I usually love. Banana bread has a special place in my heart ( it´s just soooo good! ) and it´s also such a quick and easy vegan cake option. A slice at work makes a nice sweet, but kind of healthy addition to my lunch and it´s also a delicious snack in the afternoon, I sometimes even have it for breakfast! So today I share this easy peasy recipe with you, it´s also a bit healthier than other cakes, with not much added sugar and made out of spelt flour 🙂


For one banana bread you will need:

  • 250g of spelt flour
  • 1 tsp of baking powder
  • 1 pinch of salt
  • 2 tbsp of soy flour + some water
  • 20-40g of brown sugar ( depending on how sweet you want it, I just add 20g )
  • 115g of margarine
  • 525g of bananas, the riper the better! ( it can be 20g more or less, that´s not so important )
  • you can also add some nuts or chocolate chips, if you like


Preheat your oven to 175 °C. Add the all the dry ingredients, except the sugar in a large bowl and mix. Then take another bowl and mix the sugar and the margarine together until smooth and fluffy, then add in the bananas. Rip them into pieces and then mix until they are combined with the sugar and margarine mixture. Take a small bowl and mix the soy flour and four tbsp of water in it. Add this to the banana mixture, and combine. Add the flour mixture to the banana mixture and blend. Last add your nuts or chocolate chips if you want. Fill the cake batter into a greased cake tin. Bake in the oven for about 60-70 minutes. Let it cool a bit and enjoy!
