I am actually not a big fan of bananas on their own, but muffins or cake or anything baked with banana in it, I usually love. I especially like banana bread a lot, and it´s also such a quick and easy vegan cake option. I really like to bring a few slices with me to work for lunch or have a piece as a snack in the afternoon, I sometimes even have it for breakfast! So today I share this easy peasy recipe with you, it´s also a bit healthier than other cakes, with not much added sugar and made out of spelt flour 🙂
For one bread you will need:
Preheat your oven to 175 °C. Add the all the dry ingredients, except the sugar in a large bowl and mix. Then take another bowl and mix the sugar and the margarine together until smooth and fluffy, then add in the bananas. Rip them into pieces and then mix until they are combined with the sugar and margarine mixture. Take a small bowl and mix the soy flour and four tbsp of water in it. Add this to the banana mixture, and combine. Add the flour mixture to the banana mixture and blend. Last add your nuts or chocolate chips if you want. Fill the cake batter into a greased cake tin. Bake in the oven for about 60-70 minutes. Let it cool a bit and enjoy!
