Food: The Best Cookies In Town

I honestly don´t know how many times I have made these cookies. And they always were a success. They are the perfect chocolate chip cookies. Crunchy on the outside and soft on the inside with a sweet and slightly salty taste, chunks of chocolate and tasty nuts. Bonus: They are vegan and super quick to make! Share them with your family and friends or just eat them all yourself 😉

 

What you need for 8 cookies:

  • 30g dark chocolate (72% cocoa) you can use milk- or white chocolate as well, but be aware that the cookies aren´t vegan then
  • 25g walnuts (or nuts of your choice)
  • 125 spelt flour
  • 50g caster sugar
  • 50g margarine
  • 25g oat milk
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp pre-ground vanilla

 

Before you start making the dough, preheat your ofen to 180°C and chop the walnuts and the chocolate in chunky pieces. Line a baking tray with baking paper.

Then combine all the dry ingredients except for the nuts and chocolate in a bowl and mix them together. Next add in the oat milk and the margarine. Combine everything using your hands until you have a nice dough. In the next stepp add in the nuts and chocolate.

Knead the dough again to mix everything together. Roll out the dough until it is about 1cm thin. Use a round glass to cut out the cookies. You can use a big glass to get big cookies, but i prefear to use a small one (diameter 6cm) . Place them on the prepared baking tray. Put them in the ofen for about 13 minutes and then let them cool in the fridge for 20 minutes. Enjoy!
